When cooking artichokes, DO:

  • Carefully select your ingredients.
  • If you’re going to roast them, it’s better to cook them whole.
  • If you’re going to eat them raw, cut them into very thin slices.

When cooking artichokes, DON'T:

  • Forget to remove the tiny artichoke hairs.
  • Allow them to oxidize.
  • Put them on the stove without having dried them thoroughly.

Artichokes are nutritionally very well-rounded, low in calories and with great taste. Best of all, they’re incredibly versatile and are appropriate for every budget and occasion. So, if they weren’t already part of your weekly diet, now is the time to add them to your shopping list.
