Cauliflower is a vegetable of the cruciferous family, which offers a very interesting nutritional profile, given its content in fibre, minerals, vitamins and other biologically active compounds, such as glucosinolates and isothiocyanates (particularly sulforaphane). These compounds have antioxidant and anti-inflammatory properties.
