Asparagus are the young, tender, stalks of the asparagus plant. Depending on how they grow, they can be green or white. In Spain, both varieties are widely enjoyed, although green asparagus is usually eaten fresh, while white asparagus is generally bought in tins.

Like most green vegetables, asparagus is low in calories, rich in fibre and contains vitamin C and folic acid, among other micronutrients. Their nutritional profile is also remarkable due the high levels of antioxidant components, which protect cells from oxidative damage.

They are an exceptional ingredient for the preparation of countless healthy recipes and are very versatile in the kitchen. They can be sautéed, boiled, grilled, steamed, baked or even eaten raw. Using one culinary technique or another will bring out different flavours and textures.
